Fall Favorites!


I've been away far too long! Fall is one of my favorite season and I just see too many cute and delicious things not to share! There are so many delicious recipes out there. 
My crockpot is cooking dinner for me tonight.

Crock Pot Sweet Garlic Chicken

Ingredients
  • 4-6 chicken breasts
  • 1 cup packed brown sugar
  • 2/3 cup vinegar (I used apple cider vinegar)
  • 1/4 cup lemon-lime soda (diet or regular)
  • 2-3 Tablespoons minced garlic
  • 2 Tablespoons soy sauce
  • 1 teaspoon fresh ground pepper
  • 2 Tablespoons corn starch
  • 2 Tablespoons water
  • Red pepper flakes (optional)
Direction
Spray slow cooker with non-stick cooking spray. Place chicken (frozen, thawed or fresh) inside slow cooker. Mix together brown sugar, vinegar, soda, garlic, soy sauce, and pepper together. Pour over chicken. Cook on low for 6-8 hours or high for 4 hours. 
Take chicken pieces out of slow cooker (mine basically fell apart) and pour remaining sauce into saucepan. Place saucepan over high heat. Mix together corn starch and water, pour into saucepan, and mix well. Let sauce come to a boil and boil for 2-3 minutes, or until it starts to thicken and turns into a glaze. Remove from heat and let sit for a minute or two (it will continue to thicken as it cools down).

Sprinkle red pepper flakes on top if desired. This can be served over rice or noodles

These are totally my style! And I noticed pumpkins were already out at the grocery store! You have to pick the good ones fast, I always wait and get the lumpy crooked ones.... not this year!

Apple cider margaritas  serves 1, is easily multiples    1 ounce Grand Marnier    1 ounce gold tequila    5-6 ounces sweet apple cider    orange segments and apple slices    cinnamon + cane sugar + coarse sugar for glass rimming    cinnamon sticks for garnish

Apple Cider Margaritas

YIELD: SERVES 1, IS EASILY MULTIPLIED
 
TOTAL TIME: 5 MINUTES

ingredients:

1 ounce Grand Marnier
1 ounce gold tequila
5-6 ounces sweet apple cider
orange segments and apple slices
cinnamon + cane sugar + coarse sugar for glass rimming
cinnamon sticks for garnish

directions:

Add a few spoonfuls of cane sugar, coarse sugar and cinnamon to a plate. Run an orange segment around the edge of the glass, then press into the cinnamon sugar mixture to coat the rim. Add a few orange slices in the bottom of the glass, fill with ice, then add the Grand Marnier, tequila and apple cider and stir to mix. Garnish with apple slices and cinnamon sticks. Enjoy!
Note: As a rule, I generally prefer silver tequila in my margaritas, but the gold here really gives a “warmth” that matches the cider and cinnamon perfectly.
