Sopapilla Cheesecake

My friends, if you only do one thing to celebrate Cinco De Mayo this Saturday, do this! Sopapilla cheesecake is always such a huge hit around my circle of friends. There is usually nothing left over, and everyone fights over the last piece. I'm not exaggerating here!

SOPAPILLA CHEESECAKE
  • 2 cans Pillsbury butter crescent rolls
  • 2 (8 oz.) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1/4 cup butter, meltedCinnamon & sugar
Unroll and spread 1 can crescent rolls on bottom of un-greased pan. Combine softened cream cheese, sugar, and vanilla. Spread mixture over crescent rolls. Unroll and spread remaining crescent rolls over mixture. Spread melted butter over the top and sprinkle with cinnamon and sugar. Bake at 350 degrees for 20-30 minutes.

Friday Favorite- Its over 100 here!!

It is sweltering here. How did I survive this last year pregnant? I have no clue! 
Here some ideas to beat the heat in style.
I'm obsessed with this coverup. It looks easy enough to make. I will be sporting this pool side this year! I can't find the source, but it says to use a jersey knit fabric.

It is time to invest in some mason jars, there are just too many cute things you can do with them.
Whip up these raspberry beer cocktails!
Raspberry Beer Cocktail!! Yum! Summer nights on the deck here I come!
Ingredients
1 cup of fresh raspberries or frozen
4 bottles of corona (12oz) beer, chilled
1 container frozen raspberry lemonade concentrate, thawed or pink lemonade
1/2 cup good quality vodka
Garnish: lemon slices, or raspberries.

Method
In a large container stir together the  first 4 ingredients. Serve over ice.
Garnish with raspberries.
To make ahead, stir together lemonade concentrate and vodka in a large container.    Stir in raspberries and beer just before serving. Garnish, if desired.

Summer Style

I've been seeing colored shorts everywhere and all I can think about is teenager with spaghetti strap tops with them, which is just not my style anymore. But once I saw this board I know I'll give colored shorts a try this summer! Love it for evening entertaining on the patio, or to wear to a baseball game. Great color combo

Friday Favorites- Cinco De Mayo

I'm a convenience Cinco de Mayo celebrator. If it falls on a Friday or Saturday I'm down for a good fiesta. This year it falls on a Saturday, so Party On!!
Great your guest at the door with this easy and inexpensive festive wreath!
 Just stick cocktail umbrellas in a styrofoam wreath.

For your celebration you should ask each guest to bring their favorite version of salsa or guacamole and have your guests vote for their favorite. Maybe award the winner with a bottle of tequila for margaritas.
Try making something unique like this strawberry, roasted corn & avocado salad.

No Cinco de Mayo celebration is complete without some beergaritas! 
If you've never had one its a margarita that has a beer poured in it. 
The beer adds some carbonation that makes it nice and fluffy and delicious!

For a bolder flavor, use a dark beer. Serve in 16-oz. mason jars for fun.
Prep Time: 5 minutes
Yield: Makes 4 servings

 
Ingredients
1 cup frozen limeade concentrate, thawed
1 cup tequila
1/2 cup orange liqueur
Crushed ice
1/2 to 1 cup cold beer

Preparation
1. Stir together first 3 ingredients until well blended. Fill 4 medium glasses with crushed ice. Pour limeade mixture evenly into glasses. Add beer to taste.
Note: For testing purposes only, we used Minute Maid Frozen Concentrate for Limeade, José Cuervo Especial tequila, and Triple Sec for orange liqueur.

Blue Pina Colada Punch

Here is great recipe for a blue punch. It would work well for mermaid parties (ocean water), baby showers, something blue bridal lunches, as well as many other great ideas!

Pina Colada Punch
I package Blue Raspberry unsweetened kool-aid powder
3/4 cups sugar
2 quarts water (according to kool-aid directions)
10 oz Pina Colada Mix
1- 2 liter bottle of sprite
1 lemon sliced (optional)

Directions- Mix the koolaid powder with sugar and water. Then mix in the Pina Colada mix and sprite. Garnish with lemon slices.

Friday Favorites- Outdoor Entertaining

I just got back from a week at the beach, and it was fabulous! Had to make you a little jealous :)
Landry did great on our little trip. She flew for the first time and did wonderfully. She also loved the wave at the beach and I'd have to hold her back, she was ready to dive right in!
Warm weather is here! That means long evening on the patio with family and friends. Here are some things I'm looking forward in the coming months!
I love this outfit! This is fun for a night on the patio or a date night.

Try putting your silverware wrapped in a bandana in mason jars. The will stand up to a little wind, and be cute to set a table.
This caprese salad looks like summer perfection and would be a great accompany to steaks, grilled chicken or seafood!

For easy dessert, how about watermelon slices on a stick! I'm all about doing the prep work before the guests arrive so you can enjoy yourself. Pre slice these, put them on a stick and keep them nice and cool in the fridge until its time to enjoy.

Easter is almost here!

Here are some last minute tips to get your house ready for Sunday. This centerpiece is chic and easy. Great for you last minute peeps!

We Texans have a wonderful warm weekend ahead of us. Celebrate with the little ones by making these Easter Egg popsicles! Great to cool down on Saturday from a day of outdoor play!

 I cannot find the source for this! I'm sorry to not give due credit, but it looks to me like they used those hinged easter eggs, filled the hole with their favorite juice or kool-aid and added a stick. Freeze for a few hours and enjoy your cool treat!

Don't forget to prepare for the bunny! He prefers bunny bait I hear.
Bunny Bait
1 bag popcorn, popped (I used Tender White)
6 oz. white chocolate candy coating
1 bag Easter M&Ms
pretzel sticks, broken into small pieces
colorful sprinkles, if desired
Place the popped popcorn in a large bowl with the broken up pretzels and M&Ms. Heat the candy coating in the microwave in 30 second intervals, stirring after each time, until melted and smooth.
Drizzle the candy coating over the popcorn mixture and stir to coat. The pretzels and M&Ms will sink to the bottom, so make sure to get those stirred in and coated with the rest of the popcorn.
Spread out on a large piece of wax paper, top with a few sprinkles (if desired) and let cool. Break into pieces and serve in a large bowl.

Easter Basket Cocktail


I'm in need of on of these today :) We leave to go to the beach in a few days and I've been bamboozled with things to do. 
Maybe a cocktail hour to celebrate finishing my to do list....
Rim a martini glass with thick simple syrup and then dip into dyed green coconut flakes, then adorn with a little marshmallow peep. Think of it as your very own adult Easter Basket, but instead of being filled with candy, it’s filled with boozePrepare the glasses ahead of time and put them on a tray decorated with jelly beans and other seasonal delights for a stunning effect.
For the cocktail:
* 1 1/2 ounces Cherry Vodka
* 1/2 ounce Triple Sec
* 3 ounces Half and Half or Milk
* Dash Grenadine
Shake with ice until chilled. Pour into decorated glasses and serve.
