I'm back! My fundraiser is behind me, and I have a little more free time for this blog! I've missed you guys. Today I'm all about celebrating March. It feels nice and springy here in West Texas with temperatures in the mid 70's! How about spicing up your Saturday breakfast by trying eggs bruschetta?
Valsocal blog created these delicious looking treats, and they are on my weekend menu. These are elegant and creative, they may be good on a mother's day brunch or easter menu!
Scrambles Eggs Bruschetta
scrambled eggs ( done your favorite way ) I add a little cheese.
french bread, sliced
cherry tomatoes, cut
fresh mozzarella, diced
1 garlic clove
basil
1 tablespoon olive oil
salt and pepper
1) Slice bread and add butter to a pan and grill bread until lightly brown. "set aside"
2) Cook your scrambled eggs.
3) In a small bowl, add tomatoes, garlic, basil, salt, pepper and olive oil, mix.
4) Place eggs and bread and top with tomato mixture.

Next on my Friday Favorites... YELLOW! I got a yellow jacket last weekend, and now I'm obsessed with the color!
